This time of the year brings with it a tremendous load of body conscious anxiety. Winter weight gain is inevitable. I believe that instead of feeling anxious about fitting into your summer gear once the season comes to a (welcome) end, you may as well enjoy the process of nature by embracing change. One thing to keep in mind is that this “change” shouldn’t leave you feeling sluggish and unhappy, instead it should be healthy and fulfilling.

Consider these food options for your journey towards a happy winter body:

Mushroom and Kale Quinoa

Quinoa is on its own very substantial as it is packed with protein, plus it is low-fat and gluten-free. This super grain makes for a nutritious substitute for rice or pasta. With the addition of  mushrooms and kale – it makes a hearty entrée for both vegetarians and meat eaters. This mushroom, kale and quinoa dish is simple and only takes about 20 minutes to make.
